Hides Fine Foods’ Winter Warmer Soup
2 tbsp olive oil
4 pints water
1 large onion
3 stalks celery, chopped
3 carrots, chopped
3 bay leaves
1 tbsp chopped fresh parsley
3 cloves garlic, chopped
2 tsp salt
1/2 tsp dried basil
1/2 tsp ground black pepper
1/2 tsp dried thyme
In a large pan, pour in the olive oil and put on a medium heat. Add the garlic, onion, celery, carrots and saute for 8 minutes.
Add the yellow split peas, bay leaves, and water. Bring to a boil and then reduce the heat to low. Simmer for 40 minutes, stirring occasionally.
Stir in the remaining aromatics, the salt, pepper, basil, thyme, and parsley. Cover and simmer for around 30 minutes. You’ll know it is done when the vegetables are mashable and yellow split peas are soft.
Remove the bay leaves, then blend with an immersion blender.
